My friends and I have random cravings for Mexican food, and since there is a general lack of good Mexican restaurants in Hong Kong, we normally cook up tacos at my place. We try to make everything from scratch, except for the hot sauce and the tortillas. We create a build as you go station in the middle of the table, for everyone to get what they like, including a side of lettuce wraps to mix it up a bit.
Ingredients (serves 6-8)
Guacamole (from my friend Prudence’s recipe)
2-3 avocadoes
½ onion
1 clove garlic
Lemon/Lime
Salt
Pepper
Cayenne pepper
Salsa
5 tomatoes

Olive oil
15 prawns (We used larger ones from the wet market)

Cheese (We used Monterey Jack)
Lettuce (shred half for tacos, and save the other half for lettuce shells)

Guacamole:
Finely dice onion and garlic.
Cut avocado in half, remove seed, and mash with fork.
Mix avocado, onion and garlic together.
Add lemon/lime juice, salt, pepper, cayenne pepper to taste.

Salsa:
Peel tomato skin, and remove seeds.
Finely dice the tomatoes and onions.
Combine together, add salt, pepper and lime to taste.

Shrimp:
Marinate prawns in olive oil, lime, salt and pepper.
Heat grill or pan until you can hold your hand just above grill/pan level only 1 to 2 seconds
Place the prawns on the grill/in the pan until the they are translucent.
Grill/pan-fry (dry) tortillas so they are lightly charred (approximately 15-20 seconds on each side).
Enjoy!
